Introduction

Ingredients

    1 can of diced or chopped tomatoes
    1 can of Rotel tomatoes or other tomato with green chilis
    1 can of sweet corn
    1 can of Cream Style Corn
    1 can of Black Beans
    1 lb of ground turkey
    1 packet of taco seasoning
    Optional ingredients:
    low fat sour cream
    shredded cheese
    corn or tortilla chips
    cayenne powder
    garlic powder

Directions

Brown ground turkey (can sub ground beef, if desired) and drain. Add taco seasoning, and prepare according to package directions. Dump into a big pot with all of the canned items. Add water to desired consistency-I usally add a can or two full of water. At this point, you can add other seasonings if you like, I always add some cayenne, garlic powder, and pepper to taste. Simmer, stirring often until hot. We like to serve this with low fat sour cream, shredded cheese ans corn chips stirred in, but of course, that adds to the calorie and fat content. The beans can be rinsed and drained, if desired. I estimated the number of servings, as I never really count how many servings when I make it. Makes awesome leftovers the next day!
