    Zucchini, 1 cup, shredded
    Onions, raw, 1/4 cup, chopped
    Egg, fresh, 1 large
    Bread crumbs, dry 1/4 cup
    Parmesan Cheese, grated,1/4cup
    Salt, 1 dash
    Pepper, black, 1 dash


Run a plastic knife around each one to remove from tray.


Preheat oven to 400 degrees. Mist a mini muffin pan with cooking spray.
Put shredded zucchini into paper towel and remove
excess moisture. Mix all ingredients in a bowl, until well combined. Spoon mixture evenly into prepared tray and press down with the back of a spoon to compact mixture. Bake for 15-18 minutes, until golden brown.

Serving Size: Makes 12 -2 pieces per serving
