Introduction

A basic easy white bean salad, but I like lots of parsley! I looked for something like this for a way to add more potassium to my diet. A basic easy white bean salad, but I like lots of parsley! I looked for something like this for a way to add more potassium to my diet.
Number of Servings: 4

Ingredients

    1 14.5-oz can white beans, drained but not rinsed
    2 Tbsp finely chopped red onion
    Juice of 1/2 lemon (approx 1.5 Tbs)
    2 Tsp lemon zest (about 1/2 lemon)
    2 tsp white wine vinegar
    1 Tbs extra virgin olive oil
    1/3 cup chopped parsley
    1/2 tsp dry herbs de provence
    Salt and freshly ground pepper to taste (calculated recipe with .25 tsp kosher salt)

Tips

I also like this mixed with drained, flaked tuna and arugula or chopped romaine for more of a main course salad.


Directions

Combine all ingredients. Can serve right away but even better if chilled for a few hours to let the flavors mingle.

Serving Size: Makes 4 (four) 1/2-cup servngs
