    Jennie-O Lean Ground Turkey, 16 oz
    Onions, 1 cup, chopped
    Carrots, 1 cup, grated
    Celery, 1 cup, diced
    Chicken Broth, 4 cup (2 cans)
    Potato, 4 large, diced
    Velveeta Original, 16 oz
    Evaporated milk, 1 can (13 oz)
    Butter, salted, 1/2 stick
    Flour, white, 1/4 cup
    Garlic, 3 cloves
    Green Peppers, 1/2 cup, chopped


The original recipe called for beef. We have tried it both ways, and cannot tell the difference. If you want to reduce fat and calories, try reduced fat velveeta and evaporated skim milk. We just used what was on hand.


Brown turkey in large stock pot. Add onion, garlic, carrots, green pepper, and celery. Cook until tender (about 8 minutes). Add potato and chicken broth. Bring to boil, then reduce heat and simmer 10 minutes.

Meanwhile, in a small saucepan, melt butter, stir in flour until smooth. Add milk, bring to boil, reduce heat and stir constantly for two minutes. Add cheese to mixture, stir until melted. Pour cheese mixture into soup. Stir until combined. Season with salt and pepper as desired. Serve immediately, or keep warm, stirring occasionally.
