    1 chicken thigh per person
    2 fresh basil leaves on top each chicken
    6 cloves garlic smashed spinkle over all chicken
    1tblsp fresh diced heirloom purple tomato on each chicken

    1/4 cup EVOO
    1/4 cup balsamic vinegar
    sage,oregano,thyme,pepper,red pepper to taste.
    mix seasonings with liguids.


Preheat oven to 350. Clean chicken and place in a baking dish. Top chicken with 2 basil leaves, 1 tblsp diced tomato, and garlic clove pieces. Prepare sauce in a measuring cup. Equal parts of EVOO and Balsamic Vinegar. Add whatever spices you prefer. Mix together. Pour sauce over top of chicken. Cover dish with foil. Bake for 35 minutes.

Serving Size: 1 thigh is a serving.
