    20 baby portabello mushrooms (thoroughly rinsed)
    1 package peppered bacon, thick sliced.
    1/4 cup cream cheese
    1/4 cup sour cream
    1/2 cup colby/jack shredded cheese
    2 cloves garlic minced
    1/4 cup red onion diced
    4 mushroom stems diced.
    paprika, parsley, coriander, dry mustard, and pepper to taste.


i do not measure my spices. almost everything is just a pinch. change seasonings and spices as you wish.


Preheat oven to 350. Rinse mushrooms. Pat dry. pull stem off. save 4 good sized stems. dice onions,mushroom stems and garlic. in small mixing bowl combine: cream cheese, sour cream, cheese, garlic, mushroom stems, onion and spices. Gently with a small spoon put the cheese mixture inside the mushroom caps. take one piece of bacon, wrap around mushroom and use toothpick to secure.
Place on a cookie sheet. Bake for 40 minutes. (or until desired doneness of bacon.)

Serving Size: makes 20 stuffed mushrooms.
