    1 1/2 cups flour
    3/4 cup ground flax seed
    3/4 cup oat bran
    1 cup brown sugar
    2 tsp baking soda
    1 tsp baking powder
    1 tsp salt
    2 tsp cinnamon
    3/4 cup milk
    2 eggs
    1 tsp vanilla extract
    2 Tbsp coconut oil (or veg. oil)
    2 cups shredded carrots
    2 apples, peeled and grated


Mix all ingredients together and bake at 350 for 15-20 minutes in greased muffin tins.
