    1 medium Eggplant
    2-3 Medium Zucchini
    4-5 Medium mushrooms
    Bell Peppers - Red, Green, Yellow & Orange
    each about 3/4-1 lb. - Use about 1/2 of each
    pepper - cut into 1" pieces
    1 Onion - Sliced - cut slices in half
    3 cloves of garlic - cut into slivers
    3 Red Potatoes- approx 3" diameter - cut into
    1" pieces
    Cut Eggplant & zucchini into 1" pieces

    Salt - or Lite Salt


Spray a baking pan with Olive Oil Spray.
Put all ingredients into pan.
Sprinkle w/Salt (I Use Lite Salt) Pepper & Oregano.
Then DRIZZLE the Extra Virgin Olive Oil over all.

Bake at 350 for approximately 45 minutes or until a fork can pierce the potatoes easily.

This will make approximtely 6-8 servings.
