    300g chopped chicken breast raw
    15mls olive oil
    1 med onion in slivers
    1 med sweet pepper in slivers
    2cups bean sprouts
    250g mushrooms sliced
    3 cloves garlic crushed with a little salt
    1 birds eye chili chopped fine
    15g ginger chopped very fine
    Handful coriander leaves chopped roughly
    1lime juiced
    15g cornflour


Obviously the vegetables can be swopped round , try courgettes, green beans or spring onions.


In half the oil sauté the chicken pieces. When opaque all round remove and set aside. In the second half of the oil and the same pot, sauté the onion, pepper, garlic, ginger and chili. When the onion is transparent add in the mushrooms and bean sprouts. Return the chicken pieces and continue stir frying until all ingredients are cooked. Mix the cornflour with the lime juice, add to the pot and turn to coat evenly. Add approx 70 ml water to leave a coating sauce. Serve with rice or noodles or with a salad.
