    2 Tbsp olvie oil
    1 cup mushrooms cleaned and chopped
    2 cups of grains ( I use Quinoa but any grain preferred can be used) cooked
    2 beaten egges
    2 Tbsp soy sauce
    1/2 cup cooked scallions


Rinse mushroom and chop. Put 2 Tbsp olive oil in pan at medium heat and saute mushrooms
Add 2 cups of Quinoa(cooked) after mushrooms are cooked cook for 3 to 5 mins. Add 2 beaten eggs and cook till set.
Drizzle with 2 Tbsp of soy sauce
Sprinkle with 1/2 cup of scallions

Serving Size: makes 4 servings
