    *Cake & Pastry Flour, 1 cup
    Butter, unsalted, cold, in pieces, 0.5 cup
    Cold water enough to mix (2-5 tbsp)
    Sweetzfree 5 drops (optional)


Cut the butter into the flour by hand or in a food processor until it looks like coarse crumbs. Add the water 1 tbsp at a time until the pastry forms a dough. Knead a little. Form into a ball, or 2 balls, flatten and refrigerate inside a plastic bag for at least 30 minutes, up to overnight.

Preheat oven to 425

On a floured board, roll pastry out to make one quiche or whatever crust, or divide into 2 parts, roll out the larger and use to line a shallow 8" pie dish. Roll out smaller part. Place the filling, wet the edges and place the top. Press into place and cut steam vents. Brush with milk or egg wash. Bake for 25-35 min.

Serving Size: Makes six servings of a one-crust pie, or 4 servings of a 2-crust 8" pie.
