    1 tbsp olive oil
    2 garlic cloves chopped
    1 cup finely chopped onion
    2 medium peppers-yellow or red pepper, chopped
    1 tbsp chili powder
    2 tsp cumin
    1/2 tsp dried oregano
    2 15-ounce cans of low-sodium black beans
    2 14.5-ounce can of fire-roasted crushed tomatoes
    2 chipotle chile from a can, finely chopped, add 1 tbsp of adobo sauce for spice
    1/4 cup fresh chopped cilantro
    Nonfat plain Greek yogurt for topping


Use ground cumin. You may want to add a few cups of water, there isn't much liquid in this recipe. I like my chili really chunky.


Saute onion, garlic, peppers in oil until softened. Add spices, drained and rinsed beans, tomatoes with juice, and all the rest of it. Bring to a boil again and simmer on med-low for 10 minutes.
