    Bread, pita, whole-wheat, 1 pita, large (6-1/2" dia)
    Artichokes, frozen, .1/2 package (9 oz)
    Hellmann's , Light Mayonnaise, 4 Tbsp
    Pepper, black, 1 dash
    Carrots, raw, 2/3 cup, grated (about 1 med, use organic so you don't have to peel)
    Parmesan Cheese, grated, .25 cup


Split the pita (around the edge to make two disks).
Cook artichokes according to package directions. Grate carrot. Chop or simply quarter artichokes.
Mix veggies with mayo, pepper, and cheese.
Spread half the veggie mix on each disk and broil for a couple minutes (I just use a toaster oven) if you want it hot.
Makes two servings as a meal. Serve hot or cold.
Good for a lite lunch, brunch, appetizer, or part of a buffet. Add a sprinkle of fresh chopped parsley or cilantro for a shot of color and freshness.
