Ingredients

    1 tbsp olive oil
    1 medium onion, finely chopped
    1 cup cooked white beans, any variety
    1/8 cup chopped dill
    2 /12 cups raw kale, chopped fine
    1 tbsp fresh lemon juice
    1.5 tbsp water
    1 tbsp soy sauce
    1/2 tbsp prepared mustard (optional)

Tips

Combining the white beans and the kale make this a calcium-rich meal. It's great with rice. Or even a fried egg if you're not vegan.


Directions

If using dried beans, soak overnight and then boil until soft, about one hour. (This, obviously, will increase the meal's prep time considerably. But the superior flavor and texture make it worthwhile.) Otherwise, open a 15oz can of beans, drain, and rinse.

Saute the onion in olive oil until it begins to soften, about 3 minutes. Add beans and dill and saute for another 5 minutes. Add remaining ingredients and saute for another 5 minutes, stirring occasionally.



Serving Size: makes 2 1.5 cup servings
