    2 sliced bacon, uncured
    1 sweet potato, peeled, diced
    1/2 onion, diced
    1/2 poblano pepper, diced
    2 T. pimientos
    1 T. garlic, minced
    2 t. chili powder
    1 t. cumin
    1/2 t. paprika
    1/2 t. pink himalayan sea salt


Fry bacon in a skillet. Add potato, onion, pepper, pimiento, and garlic. Once potato is browned on edges and soft, add chili powder, cumin, paprika, and salt.


Serving Size: makes 3 1 cup servings
