Basic Chicken Quesadillas Basic Chicken Quesadillas

    1 Boneless Skinless Chicken Breast
    1/4 cup Low fat Mexican blend cheese
    1 8-inch flour tortilla
    1 tsp butter
    fat free cooking spray


Rinse chicken and pat dry with paper towel.
Fillet the breast if it is thick and then cut it into cubes or strips.
Season to your own taste (I used cumin, cayenne pepper, black pepper, and a tiny bit of salt)
Heat a medium-sized skillet to medium and spray with cooking spray. Add chicken and cook until the biggest piece reaches an internal temp of 165 degrees, flipping a couple of times. Chicken should be brown on all sides.
Set chicken aside and let pan cool down enough to wipe out the grease.
Heat skillet to low/medium, add 1 tsp of butter.
When butter has melted, place tortilla in skillet. Add chicken and cheese to one side of tortilla and fold other side over.
Cook 3-4 minutes on each side until the tortilla is nicely browned and the cheese is melted.
