A healthy filling thick warming soup with a lovely sweetness A healthy filling thick warming soup with a lovely sweetness
Number of Servings: 4


    250g Celery chopped
    1 medium sized Sweet Potato diced
    1 medium sized Onion finely chopped
    1 Chicken Oxo cube made up with 1l boiling water or you can use Vegetable OXO if prefered
    25g Butter or equivalent low fat spread
    Pepper to taste


I did not add any extra salt as I usually find there is enough salt in a stock cube


Put all vegetables into a heavy based pan with the butter and gently saute the veg until soft.
Pour on made up chicken or vegetable stock
Add pepper to taste
Cover and leave to simmer for 20 - 30 minutes or until reduced down to just over half
Leave to cool and place batches into a blender and blend until smooth or if you prefer serve chunky

Serving Size: can make 4 starter size servings or 2 - 3 meal size
