    Egg, fresh, 6 large; Betty Crocker Buttermilk Complete Pancake Mix, 0.25 cup; Cinnamon, ground, 35 grams; Oikos Organic Greek Yogurt, Plain, 6 oz; Salsa, .5 cup; Taco Seasoning, 3 tsp; Garlic Salt, 0.25 tsp; Chicken Breast (cooked), no skin, 4 ounces; Parmesan Cheese, shredded, 100 grams; Fresh Cherry Tomatoes, 9


Don't get too hung up on the measurements and add according to your gut feeling.


Stir in the pancake mix to the egg and add the other ingredients as you choose. Cook on the stove top in a covered frying pan stir the eggs a couple of times to keep them cooking through. Add the cheese as the eggs become non-runny and add the cherry tomatoes embedded into the cheese and cover. The eggs provide some color to the dish.
