    1/4 c mayo
    2 T rice vinegar
    1/4 t cayenne
    1/2 t sugar equivalent
    400 gr trimmed cabbage, shredded
    1/4 c chopped onion
    1/4 c parsley, minced
    1 15 oz can mackerel packed in water, drained
    Salt and pepper
    Salad greens and or tomatoes for serving (optional)


Whisk the mayo, vinegar, cayenne and sweetener together in a serving bowl. Add the cabbage, pepper, green onions, and parsley and mix. Add the drained mackerel, break it into pieces, and mix. Season to taste with salt and pepper. Serve on greens and/or tomatoes.
