    For the chilli:

    3/4 pound lean minced beef
    1 onion, diced
    2 garlic cloves crushed or diced
    500g can chopped tomatoes
    2 tablespoons tomato puree
    1 tablespoon ground cumin
    1 tablespoon paprika
    large pinch black pepper
    1 tablespoon worcestershire sauce
    1-5 tablespoons hot sauce(depending on how hot you like your chilli)
    ! fresh red chilli, chopped OR red chilli flakes to taste
    250 ml water

    To serve:
    4 cups shredded lettuce
    4 inches cucumber, finely diced
    4 tomatoes finely diced
    2 cups red onion, finely diced
    4 flour tortillas


Chilli recipe also works really well in the slow cooker- just throw in all the ingredients and stir

Heat deep pan or flame proof casserole dish on the hob
Chop onions and garlic
Brown the meat in the pan. rermoving any fat that separates
Add onions and garlic while browning the meat
Add tomato puree and cook for a couple of minutes
Add ground cumin, paprika and black pepper and stir in
Add hot sauce and worcester sauce
Add canned tomatoes, water and red chilli
Stir well, reduce heat to low and put a lid on
Leave to simmer for about an hour- can be left on low heat for longer stirring occasionally

About 15 to 20 mins before serving heat oven to 220C
Place 4 oven proof dishes upturned on a baking tray
Drape the flour tortillas over, forming a bowl shape
Bake until crisp, leave to cool

Fill the bottom of the tortilla bowls with lettuce and cucumber
Add chilli on to the lettuce
Top with diced tomatoes and raw onion
Bake in oven
