Ingredients

    Fresh Mint
    1 Large Cucumber
    1 Block of Feta
    6 Small Limes (3 Regular)
    3 cups of dried lentils

Tips

Prepare lentils a day ahead.


Directions

Add your lentils to a large pot. 3 C H2O to 1 C Lentils.
Boil your lentils, once they start a rolling boil cover them and simmer for about 40 minutes.
Remove from heat & put in fridge over night.

Chop the fresh mint. Dice the cucumber (remove seeds if you prefer). Leave some skin on for nutrients.
You can buy crubled Feta, mine was traditional greek style so shaved it with a knife.

Mix cold lentils, cucumbers, and mint in a large bowl. Juice the limes over the bowl and mix.

Serving Size: Makes approximately 9 servings.
