Number of Servings: 4


    2 tsp. canola oil
    1 cup yellow sweet corn (kernels from about 2 ears)
    1/2 cup chopped red onion
    2 cups diced tomatoes (3 - 4 medium fresh)
    1/4 cup chopped cilantro (or substitute 1 Tbsp. chopped fresh tarragon or basil)
    1/4 tsp. salt


Heat oil in skillet over medium heat. Add corn and onion and cook, stirring occasionally, until lightly browned (about 5 minutes). Remove from the heat and let cool for about 5 minutes. Stir in tomatoes, cilantro and salt. Serve warm or cold.
