Introduction

I developed these "meatballs" using my other base recipe for "Seitan meat substitute, recipe (by SHOBAN5)". The finished flavor surprisingly reminded me of Trader Joe's vegetarian meatballs which have always been a favorite of mine. Number of Servings: 16

Ingredients

    1 cup ground seitan (Seitan meat substitute, recipe (by SHOBAN5)
    1 cup bread crumbs, any variety
    2 egg whites (or whole eggs, if desired)
    2 to 4 TB milk
    1/4 cup minced onion
    2 TB finely grated Parmesean cheese
    1 TB dried Basil (or 2 TB minced fresh)
    1 TB dried Oregano (or 2 TB minced fresh)
    salt (optional)
    1/4 to 1/2 tsp pepper

Tips

*I imagine these could be baked on parchment, a nonstick pan or a silpat with good results.


Directions

Preheat oven to 400 degrees F. Combine all ingredients and shape into 16 balls. lightly oil or spray baking sheet and sprinkle with lecithin granules (to prevent sticking and to aid in browning)*. Bake until firm, roughly 30 minutes.

Serving Size: Makes 16 "meat"balls.
