    6 Pork loin chops
    2 T Dijon Mustard
    2 T Light Mayo
    1 T Vegetable oil
    1 Slice of bread
    1/2 C chopped pecans
    1/2 t salt
    1 T parsley flakes


1. Cut and discard most of the fat from the pork chops

2. Mix the mustard, mayo & oil

3. Tear the bread into small pieces. Place the bread, pecans, salt and parsley in the food processor. Cover and blend on high speed, using quick on-and-off motions, until the pecans are finely chopped. Place pecan mixture in the shallow bowl.

4. Move the oven rack so the pork chops will be about 6 inches from the broiler. Set the oven control to broil.

5. Spread the mustard mixture over all sdes of pork. Then coat all sides with the pecan mixture.

6. Place the pork on the rack in the broiler pan. Broil about 10 minutes or until brown. Turn pork, and broil 10 to 15 mintes longer or until pork is slightly pink when you cut into the center.

Serving Size: makes 12 1/2 pork chops
