Scrambled eggs with Mediterranean twist! Scrambled eggs with Mediterranean twist!
Number of Servings: 1


    1 large whole egg
    1 egg white
    Small White Beans, cooked, 1/2 cup
    Olive Oil, 1 1tsp
    Onions, raw, 2 tbsp chopped
    Green Pepper (bell pepper), 2 Tbsp
    Mushrooms, canned, 1/4 cup
    Ginger Root,1/4 tsp
    Garlic,fresh 1/2tsp
    Oregano, ground, 1 tsp
    Pepper, black, 1 dash
    Salt, 1 dash


Chop veggies and set them aside. Mash white beans with a fork. Heat olive oil in a skillet. Add onions, and green peppers. Saute until softened. Add garlic and ginger. Saute a few more minutes. Add mushroom, mashed beans, oregano, black pepper and salt. Saute 2-3 minutes. In a small bowl scramble egg and egg white, add about 1 tsp cold water and mix well. Add eggs to veggies and cook to desired consistency.
