    1 tablespoon canola, rapeseed oil
    312g pack of Quorn, chicken flavour fillets
    250g skinless and boneless chicken breast fillets
    1kg Oriental style frozen mixed vegetables
    550g Sliced mushrooms
    2 medium onions, chopped
    0.5 can, 200ml low fat coconut milk
    1 tablespoon, 15g Thai green curry paste
    salt to taste


Fry chicken and quorn fillets until golden brown on both sides. Remove from pan and cut into bite sized pieces.
Add onions, green curry paste, chopped onions and mushrooms to the pan and sweat until onions are translucent. Add coconut milk and oriental style vegetables and cook for 5-10 minutes.
Serve with rice or potatoes.
