Number of Servings: 32

Ingredients

    4 quarts water
    3 lb whole chicken, raw = 4 1/2 cups cooked and cubed
    10 carrots, peeled and sliced
    2 celery stalk, sliced
    2 onions, chopped
    2 tbsp parsley

Directions

Chicken Soup - Makes about 8 quart jars
Entire recipe makes 32 1-cup servings.
One jar makes 3 1-cup servings.

Using an 8 quart stock pot, add water, raw chicken and remaining ingredients.
Cover and simmer for about 4 hours.
Skim off top layer of fat (don't worry if you can't get it all).
Remove skin and bone from chicken parts and return to broth.

Pack hot jars with hot prepared chicken soup leaving 1 1/4 inch head space. Remove air bubbles. Wipe rim and screw threads and adjust lids and screw bands.

Processing Methods - Pressure Canner

Dial Guage Type @ 12 pound pressure - 2,000 to 4000 ft.
Pints 75 minutes
Quarts 90 minutes

After processing, remove jars immediately, place on a rack to cool. Test for Seal.

Serving Size: Makes 8 qts (32 1-cup servings)
