    1.5 cups Flour
    1TBSP Oil
    1 tsp salt
    1 egg white
    2 TBSP Water
    1 large egg
    1 bowl of water (for dipping when sealing your tortellinis)


spread flour on a clean surface
make a well in the middle
mix egg white, egg, and oil in a separate bowl
pour mixture into the well
knead until the finished product is a dough
separate dough into two parts
roll out dough into 12 x 12
cut using a round cutter.. should make 20-25 tortellinis for each half of dough
take about 1/4 tsp of ricotta cheese and place it in the center of your round circle.
take your round dough and fold it in half (kind of like a pirogi)
wrap it around your finger and seal it
push down the top to form a tortillini
