    Olive Oil, 1 tbsp
    Onions, raw, 2 large, chopped
    Garlic, 5 cloves, minced
    *Tomatoes, red, ripe, canned, whole, no salt added, 1 can, chopped coarsely
    Carrots, raw, 4 medium, sliced thin
    Sweet peppers (bell), 1 medium (approx 2-3/4" long, 2-1/2", seeded and chopped
    *dry white wine 8 oz, .25 serving
    Oregano, ground, 2 tsp
    *Archer Farm Wild Caught Alaskan Cod Fillets, 4 serving
    Pepper, black, to taste


Preheat oven to 400. In a dutch oven heat the oil. add onions and garlic; cook, stirring as needed, until softened, about 5 minutes.
Add tomatoes, carrots, bell pepper, wine, and oregano. Bring to boil. Reduce heat and simmer uncovered, stirring as needed, until sauce is slightly thickened, about 20 min. Stir in parsley.
Ladle half of the sauce into 2-1/2 quart casserole; top with the fish. Ladle remaining sauce on top. Bake until fish is opaque, 15 to 20 minutes. Serve sprinkled with black pepper.
