Introduction

Number of Servings: 4

Ingredients

    5 cups chopped toms
    3 cups chopped red onion
    2 cups chopped sweet potato
    2 cups water
    1 habanero pepper
    2 cups bell pepper
    85g tomato purée
    560g can La Sierra black beans, drained
    1 tsp ground cinnamon
    1 tsp ground cumin
    1 cup grated carrot
    4 cloves garlic, chopped

Tips

I served this with blue corn tortillas, arugula, and a little yogurt, chipotles and jalapeños.


Directions

I started with the onions and tomatoes in a large pan over a medium heat then added the potatoes, peppers, water and spices. Lastly the beans, tomato purée and chopped garlic. I then let it all simmer on a low heat, covered, until the potato was soft. It then sat a few hours until dinner time and was very yummy :D
