Ingredients

    Ground beef, lean, 8 oz
    Ground turkey, 93% lean, 8 oz
    Green Peppers (bell peppers), 1 cup, chopped
    Onions, raw, 0.5 cup, chopped
    Beans, black, 1.5 cup, low sodium, drained, rinsed well
    Brown rice, cooked, 2 cups
    Tomatoes, red, ripe, canned, crushed, no salt added, 3.5 cup (28 oz)
    Simply Enjoy Fra Diavolo Pasta Sauce, 1 cup
    Gina Rispoli Arrabbiata pasta sauce, 3 cups (25oz jar)
    Del Monte canned diced tomatoes, no salt added, 1.5 cups
    Mozzarella Cheese, part skim milk, shredded, 2 oz
    Cabbage, savoy, fresh, 4 cups, shredded

Tips

You can use leftover rice, or cook the rice earlier and let it wait. I cook up a pound of ground beef and a pound of ground turkey with the onion and green pepper, and then place half of it in a bag and freeze it for later use.


Directions

Cook rice. Set aside.
Brown turkey and beef with onion and green pepper until cooked through. Set aside.
In a large sauce pot or bowl, combine all tomato products, rice, meat mixture, and black beans.
Place half of shredded cabbage in bottom of a large lasagna pan. Cover with 5 cups of the tomato meat sauce mixture. Sprinkle with cheese. Layer the second half of the cabbage over this, and top with remaining 6 cups of tomato meat sauce mixtures. Cover with foil. Place in 350 F oven for 45 minutes.
