    290g Parsnips (peeled and sliced)
    130g Leek (sliced)
    75g cabbage greens (chopped)
    145g Butternut Squash - zapped in microwave and chopped roughly with skin ON
    1 vegetable cube
    10g marmite / vegemite
    60g of Soya Mince (TVP) = Textured Vegetable Protien (Textured Soya Protein)
    3 cups of water


remove the seeds from the Squash, put in a bowl and microwave for 3 mins. Meanwhile peel the parsnips and chop into slices, chop the leek, and the greens, add to a pan / pot on the stove (hob) and add a Vegetable stock cube, 10g of Marmite (vegemite) and 3 cups of water, add the chopped squash and the Soya Protein & bring to the boil. Simmer for 15mins. Serves 3 easily - 2 cups per serving.
