Ingredients

    15 oz canned diced tomatoes with juice
    15 oz can black beans drained and rinsed
    1 1lb ground beef browned
    1.5 C Sargento Shredded Reduced Fat Mexican Cheese
    6 large eggs
    1/2 C taco seasoning
    1 C water

Directions

brown ground beef in large fry pan, drain fat, add taco seasoning to taste, water, tomatoes, and beans. bring to boil and let simmer for approx. 20 minutes.

Spoon into ramekin, top with 1 raw egg, and 1/4 C cheese
Bake in a 350 oven until egg is set approx. 12 minutes
