Introduction

Number of Servings: 19

Ingredients

    2 cups oatmeal
    1/3 cup protein powder
    1/3 cup brown sugar
    ¼ cup dry malt extract
    1/3 cup flax seed meal
    1/3 cup almond meal
    1/3 cup toasted wheat germ
    1/3 cup cocoa powder
    2/3 cup chopped nuts (peanuts, almonds, etc)
    ½ tsp salt
    1/3 cup craisins (cranberry raisins)
    1/3 cup chopped dates
    2/3 cup flaked coconut
    ¼ cup mini chocolate chips (optional)
    1/4 cup chia seeds

    2 tbsp canola oil
    2 to 3 tbsp local honey
    ½ cup vanilla soy milk
    ½ cup peanut butter
    ¼ cup cashew butter
    1 tsp vanilla extract

Tips

Can add other nutritional ingredients like chia seeds, etc. Also, I'm now using muscavado sugar in place of the brown sugar. You may need to adjust the amount of soy milk to get the right moisture content so it is not too crumbly and forms up well.


Directions

Combine dry ingredients first and then add wet ingredients. Mix well then turn on to a sheet of wax paper. Form into a long rectangular log. Wrap tightly with the wax paper and refrigerate or freeze overnight until firm. Cut into ½ inch wide bars and wrap individually with cling wrap. Makes about 18-20 bars.
