Ingredients

    450 g chicken breast poached in a little water
    Head of broccoli in florets (poached in same water after chicken removed) for 4 mins
    1 small onion
    2 cloves garlic chopped small and sautéed in non fat cooking spray
    350g pasta cooked until al dente drained and set aside
    600 ml skim milk
    2 tabs cornflour
    30g grated cheddar
    125 g pack of mozzarella ball.

Tips

You can use dried milk powder to make the milk for sauce keeping a little water back to poach the chicken and broccoli, add this in once these are cooked.


Directions

Cook the pasta and drain, poach the chicken and set aside partly cook broccoli and sauté the onion and garlic in a little non stick cooking spray. Make a white sauce with the milk and cornflour, stir in 30g grated cheddar. Add the sauce to the onion and garlic pan deglazing the pan. Mix all the ingredients except the mozzarella and put in a deep baking dish. Top with 125 g sliced mozzarella and bake at 180 for 25 mins.
