Ingredients



    Yellow Peppers (bell peppers), 2 pepper, large (3-3/4" long, 3" dia)
    Pacific Natural Foods Organic Diced Tomatoes, 1/2 cup, 3.5 serving
    93% Lean Ground Beef, 12.5 oz
    White Rice, long grain, cooked, 1.75 cup
    Cheddar Cheese, .46 cup, shredded

Directions

Cut each bell pepper into thirds (making 6 equal bowl shaped pieces) and cook in pot boiling water for approx. 5-7 mins. Brown ground beef season with salt and pepper; add cooked rice and can of diced tomatoes. Place bell peppers in baking dish and fill equally with ground beef mixture. fill in around with any extra filling and sprinkle cheddar cheese over top. Bake 15-20 mins at 350 or until cheese is melted.
