    0.50 tsp Salt
    1 cup (8 fl oz) Water, tap
    1 cup Yellow Cornmeal
    2 tbsp Butter, unsalted


Good for breakfast or as a snack. Children like this as well.


Put the corn meal in a bowl with the salt and stir. Add the boiling water a little bit at a time stirring well as you add it. It is ready to fry when the batter is stiff but holds together.

Wet hands with cold water then spoon one sixth of the batter in to your hand. Shape quickly making a cake of the right size and put in the heated frying pan with one Tbsp. butter. Do not crowed and cook for about ten minutes over medium heat, before turning once. They should be brown in places but not all over. Use the rest of the butter for the second lot of cakes. More can be used if needed to keep from sticking. Server broken open and buttered if you like.

Serving Size: One cake about 3 inches across and one quarter inch thick.
