Ingredients

    2.5 cup Flour
    .3 cup Sugar
    2 tsp Baking Powder
    .5 tsp Salt
    .2 cup Shortening
    2 Eggs
    .75 cup Milk, 1%
    2 medium over ripe Bananas
    4 tbsp Peanut Butter, smooth style
    .3 cup Wheat germ

Tips

Variations: Substitute 1/2 cup drained crushed pineapple or 1/2 cup gratede carrot for banana.


Directions

Sift dry ingredients. Cut shortening and peanut butter into dry ingredients. Beat eggs. Blend eggs and milk. Add liquid ingredients and mashed banana to dry ingredients. Stir until entire mixture is moistened. Fill paper lined muffin pan. Bake at 375 degrees for 20 minutes.
