Number of Servings: 4


    Chicken Breast, no skin, 4
    Salt, 1 tsp
    Pepper, black, 0.5 tsp
    Olive Oil, 3 Tbsp
    *Fennel seed, 1 tsp
    Garlic, 2 cloves finely chopped
    1 lemon cut in half
    Green Olives, pitted, 1/2 cup
    peperoncini peppers, 1 cup
    red pepper flakes, 1/2 tsp


1. Place chicken brests in a shallow baking dish with the olive oil

2. Rub the chicken with the garlic

3. In a small bowl mix salt, black pepper, red pepper flakes and fennel. Sprinkle this mixture on both sides of the chicken

4. Add the peperoncini and olives on top of the chicken.

5. bake at 350 degrees for 50 min-1 hour. Baste every 15 minutes while cooking

6. When the chicken is done squeeze lemon juice over the dish

7. Spoon pan juices over each portion
