    2 cups chopped or pulled rotisserie chicken
    1 cup chopped celery
    1/4 cup chopped carrots
    1/4 cup chopped onion
    1-2 cloves of garlic (to taste)
    2 Tbsp butter
    2 Tbsp Extra virgin olive oil
    8 ounces egg noodles
    1 carton low sodium chicken broth
    1/2 teaspoon dried marjoram
    1/2 teaspoon ground black pepper
    1 bay leaf
    1 tablespoon dried parsley


Can substitute EVOO, Butter, Margarine to your dietary needs


Prep: Cut vegetables to your preferred liking. I generally slice me celery and carrots into larger chunks and dice my onions and garlic fairly fine.

1. In a large stock pot, saute celery and onion in butter and EVOO (or just EVOO, if you prefer). Add garlic a few seconds before step 2.

2. Add chicken, carrots, broth, marjoram, black pepper, bay leaf, and parsley. Simmer for 30 minutes, or until carrots are tender.

3. Add noodles, and simmer for 10 more minutes.
