    3 cups torn Bibb lettuce
    1 cup sliced strawberries
    1 ripe pear, chopped
    2 green onions, sliced thinly
    cup chopped pecans, toasted
    1 tablespoons extra virgin olive oil
    1 teaspoon grated lemon rind
    1 tablespoon fresh lemon juice
    2 oz goat cheese, crumbled


serve with Herb-Roasted Pork Tenderloin with Spicy Dijon


Combine lettuce, strawberries, pear, green
onions and pecans in a salad bowl; toss. Whisk
together oil, lemon rind and lemon juice in a
small bowl. Drizzle over salad; toss to coat. Top
with goat cheese.
