Ingredients

1/2 tsp butter
1 TBLS heavy whipping cream
2 large eggs
1 TBLS shredded parmesan
salt and pepper to taste
paprika (optional)
Tips
The perfect baking time will depend on the size of your ramekins and your tolerance for runny yolk. My ramekins are small diameter and deep, and 15 minutes was not enough to set the yolks. If yours are much wider than tall, 15 minutes may overcook the yolks.
Directions
1. Set oven to 375.
2. Butter ramekin.
3. Pour the cream into the ramekin.
4. Add the eggs gently, one at a time, keeping them in the center. The cream will wrap around the edges.
5. Add the cheese on top, sprinkle with salt, pepper, and paprika (if desired).
6. Place ramekin on a cookie sheet (for easier handling) in the oven.
7. Bake until set, but still soft in the center (approximately 15 minutes, see tips).
