    1 cup egg substitute
    1 cup chopped cooked broccoli
    0.25 cup reduced fat cheddar cheese
    as much pepper as you like
    nonstick spray - dont need if you have nonstick pan


preheat oven to 400 F. microwave broccoli until tender (about 3 minutes, covered). Spray muffin pan with nonstick spray. Spoon broccoli into muffin pan evenly. Sprinkle with pepper. Pour egg substitute evely over broccoli to the top of each muffin cup. Sprinkle cheese over each cup. Pepper again. Bake for 20-25 minutes. Multiply ingredients as needed to make a whole muffin pan.
