    1.5 cups light coconut milk (I used Thai Kitchen brand)
    1.5 cups dry brown rice
    1.5 cups water
    1 1/4 cups crushed pineapple


For colour, you could also added sliced green onion when you add the pineapple.


Cook rice in water and coconut milk as per rice directions (I bring to a boil and cover and simmer for 35 minutes). Stir in crushed pineapple while still on warm burner. Serve.

Serving Size: Makes 8 servings, slightly more than 1/2 cup
