Ingredients

500gms penne pasta I use wholewheat but white works fine too
1 medium pepper chopped
1 onion chopped
1 clove of garlic if liked
1 400 gm tin of chopped tomatoes
1 cup grated mozarella cheese
1 or 2 tbsps fresh basil shredded, or 1 tsp dried
Tips
Other vegetables could be added. A chopped courgette would be nice. Would also work with cheddar cheese.
Directions
boil the pasta, while it is cooking gently fry the onions in a tiny amount of light olive oil, or spray without browning. When they are translucent, add chopped pepper, garlic if liked, stir for a few minutes and then add chopped tomatoes, and fresh basil. Season to taste. Drain the cooked pasta, mix in the sauce and sprinkle with the mozzarella. Bake in a medium oven for 20 minutes until bubbling and cheese has melted.
