Introduction

Ingredients

    Onions, raw, 1 large
    Celery, raw, 3 strip (4" long)
    Carrots, raw, 2.5 large (7-1/4" to 8-1/2" long)
    Zucchini, 2 cup, sliced
    Capsicum (1serving=1large=1cup), 2 serving
    Ardmona Crushed Tomatoes, 220 gram(s)
    Garlic, 3 tsp
    Italian soup mix - mangia bene - 50g serve, 10 serving
    Vegetable stock powder - Vegeta brand, 20 grams
    (Add whatever herbs and spices you wish to, but remember they are not included in nutritional value listed.)

Directions

Dice all vegetables into even sized pieces, pour over crushed tomatoes, add garlic and soup mix.
Pour over 2 litres of water and stir through the stock powder.
Bring to the boil uncovered, stirring to prevent anything sticking to the bottom of the pan, reduce to simmer, cover, and stir occasionally until you are ready to eat.
I usually allow it to simmer slowly from mid-morning until dinner time, because the extra time allows the flavour to develop properly, but once the larger of the pulses are softened to your liking, it is ready to serve.
