    1 whole wheat tortilla
    1/4 C shredded reduced fat cheddar cheese
    1/4 C cooked chicken
    1/4 C can corn kernels, drained
    1 oz roasted red pepper, drained & chopped
    1 Tbsp fresh chopped cilantro
    2 tsp salsa (heat is up to you)


Make several ahead and reheat in a microwave at half power for about 25 seconds. Makes a great take along lunch!


Top half tortilla with cheddar, turkey corn, pepper & cilantro. Fold unfilled side over the top of filling and press down lightly. Spray large nonstick skillet with nonstick spray and add quesadilla and cook until crisp, about 1 1/2 minute on each side.
Cut in half and transfer to platter. Serve with sour cream and salsa.

Serving Size: 1 serving. Adjust to create amount to serve.
