Introduction

Number of Servings: 16

Ingredients

    1 Tbsp Chia seeds, ground
    1 c whole wheat flour
    1/2 c white flour
    1/2 tsp ground nutmeg
    1 tsp unsweetened cocoa powder
    2 tsp baking soda
    1/2 tsp salt
    2 eggs
    1/4 c extra virgin olive oil
    2/3 c & 1 1/2 Tbsp Maple Syrup
    1 1/2 Tbsp water
    1 Tbsp vanilla extract
    2/3 c dark chocolate chips

Directions

Mix dry ingredients in one bowl. Mix wet ingredients in a separate bowl. Fold wet ingredients into the dry ones. Mix in chocolate chips. Spoon batter into muffin tins sprayed with Pam or lined with paper liners. Bake at 350 degrees for 30 - 35 minutes, or until toothpick inserted into center comes out clean. Makes 16 standard sized muffins.
