    Barilla Whole Grain Rotini, 1 cup
    Butter, salted, 3 tbsp
    Flour, white, 2 tbsp
    Onions, raw, .5 medium (2-1/2" dia)
    Garlic, 1 clove
    Milk, 2%, 1.5 cup
    Parmesan Cheese, grated, .25 cup
    Baby spinach 2 cups


In a saucepan melt the butter over medium high heat. Add the chopped onion and let them sweat until translucent.
Add the flour and cook the rhue for about 5 minutes or so. Add the garlic and cook until fragrant, about 2 minutes.
Add the milk and as the mixture starts to boil, lower the heat to a simmer and cook until slightly thickened. Add the parmesan cheese and cook another couple minutes. Add salt and pepper to taste.
Pour the sauce over the cooked pasta and add the fresh spinach. Allow the spinach to wilt and then serve
