    1 carton liquid egg whites
    1 bag trader joes fire roasted bell peppers and onions
    5 oz deli ham (low sodium)
    2T enchilada sauce
    2 oz lite shredded mozzarella cheese


I transfer to a paper towel because they get a little moist and store better if you can cool the liquid out (so they are not stored in the liquid)

I have also done similar muffins with quinoa. Add about 1.5c of quinoa to the mix (not included in calorie count) - this helps with the moisture issue too.


SautÚ the peppers in a pan until mostly cooked
Add ham (I slice the deli slices so they are smaller pieces)
Add enchilada sauce and mix well

Transfer to muffin tins - equally divide and avoid any liquid in the transfer

Add liquid egg whites in equal quantity for each "muffin"
Top with a pinch of mozzarella each
Take a fork and mix lightly

Then bake 25-30 minutes at 350 degrees

Allow to cool slightly, transfer to a paper towel covered plate and allow to completely cool
Then wrap and save in the refrigerator

Microwave for 30-45 seconds when you are ready to eat
